Turmeric Carrot Soup

Turmeric-carrot soup:

Ingredients:

– 2 teaspoon of turmeric powder
– 2medium size onions
– 500 grams organic carrots
– 500 ml. organic vegetable soup
– 2 garlic cloves
– 1 and half teaspoons of cumin seeds
– 1spoon honey
– Lemon juice from half a lemon
– Pinch of a salt and black pepper
– 100 ml. sour cream
– Butter

Preparation

• Turn on the oven on medium heat and melt the butter in a big sauce pan. Put the onion in it and fry it about 2 minutes. Then add the carrots and soup and cook it about 20 minutes until the carrots get soft.

• Put the cumin seeds into a frying pan on a medium heat and bake for 5 minutes with constant stirring. Then grind them in a spice mill.

• When the soup is ready, blend the onion and carrots until they get creamy. Turn them back in the sauce pan and add the honey, lemon juice and turmeric. Put some salt and pepper and the soup is ready. Mix the cumin with the sour cream and add it in the soup.
